Ingredients for Baked Ziti
  • 1 lb ziti
  • 1 lb Italian sausage
  • 2 cups mozzarella
  • 1/2 cup parmesan
  • 3 garlic cloves, minced
  • 1 yellow onion, chopped
  • 2 tbs olive oil
  • 24 oz marinara or tomato sauce
  • 1/4 cup fresh basil
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt

What the best recipes taught us

  • Cook the pasta until it is just shy of done. If you cook it all the way in the water, it will be mushy after it bakes.
  • Salt the sauce before it goes in the oven. If it is bland in the pan, baking will not fix it.

Method

    Heat the oven to 375°F.

    Bring a large pot of water to a boil. Add the salt to the water.

    Add the ziti to the boiling water. Cook until it is just shy of done. Drain.

    Heat the olive oil in a wide pan over medium heat.

    Add the sausage. Cook, breaking it up, until browned, 6 to 8 minutes.

    Stir in the onion and garlic. Cook until soft, 4 to 6 minutes.

    Stir in the marinara, the pepper, and a little salt. Simmer 5 minutes. Taste.

    In a 9×13-inch baking dish, layer sauce, pasta, and mozzarella. Repeat. Finish with mozzarella and parmesan.

    Bake uncovered until bubbling and the cheese is browned in spots, 25 to 35 minutes.

    Rest 10 minutes so it slices instead of sliding.

    Sprinkle chopped basil on top.
