Ingredients

Ingredients for Tomato Sauce
  • 1 (28 oz) can whole peeled tomatoes or crushed tomatoes, or 2 lb ripe tomatoes
  • 1 yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 3 tbs olive oil
  • 1 tsp sugar
  • 1/4 cup fresh basil
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt

What the best recipes taught us

  • Cook the onion until it is soft before the tomatoes go in. If the onion is underdone, the sauce tastes like raw onion.
  • Simmer until the sauce is thick. Fresh tomatoes take longer than the can. If you stop too soon, it stays watery on the pasta.

    If you are using fresh tomatoes, bring a pot of water to a boil. Cut a small X in the bottom of each tomato. Boil the tomatoes until the skins split, 30 to 60 seconds.

    Lift them into a bowl of cold water. Peel the skins. Core the tomatoes and crush them.

    Chop the onion. Mince the garlic.

    Heat the olive oil in a saucepan over medium heat. Cook the onion in the pan until it is soft, about 8 minutes. Stir the garlic in the pan for 30 seconds.

    Add the tomatoes to the pan. Crush any whole tomatoes with a spoon. Stir in the salt, pepper, sugar, and oregano.

    Simmer until the sauce is thick, 25 to 30 minutes if you used the can, or 35 to 45 minutes if you used fresh tomatoes. Stir in the basil. Salt to taste.
