Ingredients for Spaghetti and Meatballs

Sauce

  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 yellow onion, finely chopped
  • 2 tbs olive oil
  • 1/2 tsp red pepper flakes
  • 8 fresh basil leaves
  • 1 tsp ground black pepper
  • 1 1/2 tsp kosher salt, plus more for the pasta water

Meatballs

  • 2 lb ground beef (80 to 85% lean), or 1 1/2 lb beef + 1/2 lb ground pork
  • 1 large egg
  • 1/2 cup grated Parmesan, divided
  • 1/2 cup breadcrumbs
  • 2 tbs fresh parsley, chopped

Pasta

  • 1 lb spaghetti

What the best recipes taught us

  • Mix the meatball mixture gently. A gentle mix is what keeps the meatballs tender.
  • Brown the meatballs, then simmer them in the sauce. Browning first, then the sauce, keeps them tender.

    In a large bowl, mix the beef with the breadcrumbs, egg, half of the Parmesan, parsley, a third of the garlic, salt, and pepper. Stop when it looks even.

    Roll into golf ball size meatballs and set on a plate.

    Heat the olive oil in a wide skillet over medium high heat.

    Brown the meatballs on all sides, working in batches. Set them on a plate.

    Lower the heat to medium. Add the onion to the same skillet and cook until soft, about 5 minutes.

    Add the remaining garlic and the red pepper flakes. Stir 30 seconds.

    Pour in the crushed tomatoes. Season with salt.

    Tuck in the basil. Return the meatballs to the skillet. Simmer gently 15 to 20 minutes, until the meatballs are cooked through.

    Meanwhile, bring a large pot of water to a boil and salt it generously.

    Add the spaghetti to the boiling water and cook until just shy of done. Scoop out 1/2 cup of the pasta water, then drain.

    Add the drained spaghetti to the skillet with a splash of the pasta water. Toss until coated.

    Take the pan off the heat. Add the remaining Parmesan and toss once more.

    Serve the spaghetti with the meatballs on top.
