  • 1 1/2 cups water
  • 4 cups bread flour, plus more for dusting
  • 1/2 cup active sourdough starter
  • 2 teaspoons kosher salt

What the best recipes taught us

  • Proof the dough overnight in the fridge. Cold dough scores clean and bakes with a darker crust.
  • Bake the loaf covered for the first 20 minutes. The covered steam is what makes the loaf rise and blister the crust.

Method

    In a large bowl, mix the flour, water, and starter until no dry flour remains.

    Add the salt. Mix until the dough comes together.

    Cover and rest 20 minutes.

    With a wet hand, stretch one side of the dough up and fold it over. Turn the bowl and repeat on all four sides.

    Cover and let rise at room temperature until doubled, about 3 to 5 hours. Repeat the fold once or twice during the first 2 hours.

    Turn the dough onto a lightly floured board.

    Shape into a tight ball. Cup the dough and pull it toward you until the surface is taut.

    Set the ball in a floured bowl, seam tucked under so the top stays smooth. Cover and refrigerate overnight, 8 to 16 hours.

    Heat the oven to 450°F with a Dutch oven inside for 30 minutes. Keep the dough in the fridge until the pot is hot.

    Turn the cold dough onto a board, seam side down. Score the top with a sharp knife.

    Pull the hot Dutch oven out of the oven. Take the lid off. Set the dough in the pot, cover, and return the pot to the oven.

    Bake 20 minutes with the lid on, then 20 to 25 minutes with the lid off, until the crust is deep brown.

    Lift the loaf onto a rack.

    Cool at least 1 hour before you slice.
