  • 2 large eggs
  • 4 tablespoons butter, melted, plus more for the skillet
  • 1 3/4 cups whole milk
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt

What the best recipes taught us

  • Mix only until the flour disappears. A light mix is what keeps the pancakes fluffy.
  • Flip each pancake only once. One flip lets them finish cooking and stay fluffy.

    In a large bowl, whisk the flour, sugar, baking powder, and salt until evenly mixed.

    In a second bowl, whisk the eggs until the yolks and whites look even.

    Whisk in the milk.

    Whisk in the melted butter.

    Whisk in the vanilla.

    Pancake batter just combined with a few lumps

    Pour the wet mixture into the dry mixture.

    Stir with a spatula just until you no longer see dry flour. A few small lumps are fine.

    Do not beat the batter smooth or the pancakes will be less fluffy.

    Let the batter sit 5 minutes while the skillet heats.

    Set a large skillet or griddle over medium heat.

    When a drop of water skitters, add a thin film of butter and swirl to coat.

    Scoop about 1/4 cup batter per pancake onto the hot surface, leaving space between them.

    Cook until bubbles form across the top and the edges look set, 2 to 3 minutes.

    Flip once and cook until the underside is golden, 1 to 2 minutes more.

    Add a little more butter between batches as needed.

    Serve the pancakes warm.
