Ingredients

  • 2 1/2 tbs butter
  • 1/2 cup water
  • 2 1/2 cups flour
  • 1 1/4 tsp yeast
  • 1 3/4 tsp sugar
  • 1/3 cup yogurt
  • 1 tsp salt

    Warm the water until it feels just warm to the touch, not hot. In a mixing bowl, stir the yeast into the warm liquid with a pinch of the sugar and let it sit until foamy, about 5 to 10 minutes.

    Add the flour, butter, sugar, and salt and mix until a soft dough forms. Knead until smooth and elastic, 6 to 10 minutes by hand or 4 to 6 with a mixer. Place in a lightly greased bowl, cover, and let rise until doubled, about 1 to 1 1/2 hours.

    Punch down the dough. Shape as the dish needs (loaf, rolls, or freeform). Place on a lined pan.

    Arrange the pieces in a greased or parchment-lined pan with a little space to expand. Cover and let rise until puffy, 30 to 45 minutes. Heat the oven to 350°F. Bake until deep golden and cooked through, about 20 to 30 minutes depending on size. Cool slightly.

    Serve warm. Store covered once fully cool.
