Ingredients

Ingredients for Focaccia
  • 3 cups all-purpose flour
  • 1/4 cup olive oil
  • 1 1/4 cups water
  • 1 1/2 tsp instant yeast or active dry yeast
  • 1 1/2 tsp kosher salt

What the best recipes taught us

  • Let the dough rise until it is doubled. If you skip the rise, the focaccia will be dense.
  • Dimple the dough with oiled fingers before it goes in the oven. If you skip the dimples, the oil sits on top and the bread stays dense.

Method

    11/2tspsalt

    11/4cwater
    11/2tspinstant yeast or active dry yeast

    Mix the flour, yeast, and salt in a bowl.

    Add the water and 2 tablespoons of the olive oil to the bowl. Stir until no dry flour remains.

    Cover the bowl. Let the dough rise until it is doubled, about 1 hour.

    Heat the oven to 425°F.

    Pour the remaining olive oil into a baking pan.

    Scrape the dough into the pan. Press it to the corners with oiled fingers. Dimple the dough. Let it sit 20 minutes.

    Bake until the top is golden brown, 20 to 25 minutes.

    Lift it out of the pan. Cool a few minutes. Serve.
