  • 1 1/2 lb skinless cod or haddock fillets
  • 3 large russet potatoes
  • 4 cups vegetable oil, for frying
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 cups cold beer or sparkling water
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt, plus more while hot

What the best recipes taught us

  • Fry the chips until they are tender, then fry them again until they are golden brown. If you skip the first fry, the insides stay underdone when the outsides brown.
  • Heat the oil to 375°F before you add the fish. If the oil is not hot enough, the batter soaks up oil and turns soggy.

Method

    Thick potato chips cut and patted dry
    3 largerusset potatoes

    Peel the potatoes.

    Cut them into thick chips, about as thick as a finger.

    Rinse the chips in a colander.

    Pat them dry.

    Beer batter in a bowl and flour for dredging

    11/2ccold beer or sparkling water

    Mix most of the flour with the baking powder, salt, and pepper in a bowl.

    Whisk the beer or sparkling water into the bowl until the batter is smooth.

    Put the rest of the flour on a plate.

    Meanwhile, pour the oil into a large saucepan.

    Heat the oil to 325°F.

    Add a few chips at a time to the hot oil.

    Fry until they are tender but not brown, about 4 minutes.

    Lift the chips onto a rack.

    Let the oil return to 325°F between batches.

    Heat the oil to 375°F.

    Pat the fish dry.

    Cut the fillets into pieces about 3 inches long.

    Dredge the pieces in the flour on the plate.

    Dip them in the batter. Let the extra batter drip back into the bowl.

    Fry until the batter is golden brown, 4 to 5 minutes.

    Lift the fish onto a plate. Salt them while they are hot.

    Let the oil return to 375°F between batches.
