  • 1 1/2 lb skirt or flank steak
  • 12 flour tortillas
  • 1 large yellow onion, sliced
  • 3 garlic cloves, minced
  • 3 bell peppers, sliced
  • 3 tbs olive oil, divided
  • 1 tbs chili powder
  • 2 limes
  • 1 1/2 tsp ground cumin
  • 1/3 cup fresh cilantro, chopped
  • 1 tsp ground black pepper
  • 1 1/2 tsp kosher salt, plus more to taste

What the best recipes taught us

  • Heat the skillet until it is very hot before the steak goes in. If the pan is not hot enough, the steak steams and does not brown.
  • Slice the steak across the grain into thin strips. If you cut with the grain, the meat is chewy.
  • Rest the steak for at least 10 minutes before you slice it. If you cut too soon, the juices run out and the meat is dry.

    Slice the onion into strips.

    Slice the bell peppers into strips.

    Mince the garlic. Chop the cilantro.

    Cut one lime in half. Cut the other lime into wedges.

    Pat the steak dry on a plate.

    Rub both sides with the chili powder, cumin, salt, and pepper.

    Set a large skillet over high heat until it is very hot.

    Add 1 tablespoon of the olive oil to the skillet.

    Lay the steak in the skillet.

    Cook without moving it until the bottom is brown, about 3 minutes.

    Flip the steak.

    Cook until a thermometer in the thickest part reads 130°F, about 3 minutes more.

    Take the steak out of the skillet.

    Add the remaining olive oil to the skillet.

    Add the onion and bell peppers to the skillet.

    Meanwhile, let the steak rest for at least 10 minutes.

    Cook the onion and peppers, stirring, until they are soft and brown in spots, about 8 minutes.

    Add the garlic to the skillet and stir until you smell it, about 30 seconds.

    Slice the steak across the grain into thin strips.

    Return the steak and any juices to the skillet.

    Squeeze the halved lime over the steak and vegetables in the skillet.

    Toss once. Salt to taste.

    Move the steak and vegetables to a plate.

    Warm the tortillas in the skillet until they are soft.

    Pile the steak, peppers, and onion onto the tortillas.
