Pot

  • 2 lb ground beef
  • 3 garlic cloves, minced
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons chili powder
  • 1 (28 oz) can crushed or diced tomatoes
  • 2 (15 oz) cans kidney or pinto beans, drained
  • 1 (12 oz) beer
  • 1 jalapeño, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 1/2 teaspoons kosher salt

Bowl

  • 1 cup shredded cheddar
  • 2 scallions, sliced

What the best recipes taught us

  • Brown the beef before you add the onion. Browning the beef first is what gives the chili its flavor.
  • Toast the chili powder and cumin in the fat. A short cook in the fat makes the spices smell toasty and seasons the whole pot.

Method

    Heat the olive oil or vegetable oil in a Dutch oven or heavy pot over medium-high heat.

    Add the beef and cook, breaking it up, until the bottom of the pot is browned, 8 to 10 minutes.

    Spoon off extra fat if it pools in the pot.

    Stir in the onion, bell pepper, jalapeño, and garlic.

    Cook until the onion is soft, 5 to 7 minutes.

    Stir in the chili powder, cumin, oregano, salt, and pepper.

    Cook 30 to 60 seconds until the spices smell toasty.

    Add the tomatoes, beer, and drained beans to the pot.

    Scrape up the brown crust on the bottom of the pot.

    Bring to a gentle simmer, then lower the heat so it barely bubbles.

    Cook uncovered, stirring now and then, until thick, 45 to 60 minutes.

    Salt to taste. Ladle into bowls. Top with sliced scallions and shredded cheddar.
