Heat the butter in a heavy pot over medium heat. Add the white onion, onions, garlic ground cloves, minced, celery, carrot, and carrots and cook, stirring, until soft and fragrant, about 5 to 8 minutes.
Add the chicken and cook, breaking it up if needed, until it loses its raw color and takes on a little browning.
