  • 2 lb skirt or flank steak
  • 4 garlic cloves, minced
  • 1/2 white onion, chopped
  • 1/4 cup olive oil
  • 3 limes, juiced, plus wedges to serve
  • 1 jalapeño, minced
  • 1 orange, juiced
  • 2 tablespoons vinegar
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1 1/2 teaspoons kosher salt

What the best recipes taught us

  • Give the steak time in the marinade. Lime, garlic, and oil need time on the meat.
  • Rest the steak, then slice it thin across the grain. That cut is what keeps the meat tender.

    1/2cchopped fresh cilantro
    1/2white onion, chopped
    1jalapeño, minced
    1tspground cumin
    2tbsvinegar
    11/2tspkosher salt
    1tspground black pepper

    In a bowl or zip-top bag, stir together the lime juice, orange juice, olive oil, garlic, cilantro, onion, jalapeño, cumin, vinegar, salt, and black pepper.

    Add the steak and turn to coat. Marinate in the refrigerator at least 1 hour, or up to 8 hours.

    Pull the steak out 20 to 30 minutes before grilling so it is not ice cold.

    Heat a grill or grill pan to high until it is smoking hot.

    Lift the steak from the marinade and let the excess drip off. Discard the leftover marinade.

    Grill without moving until well browned, 3 to 5 minutes per side for medium-rare on a typical skirt or flank steak.

    Pull when a thermometer in the thickest part reads 145°F, or a little under if you like it pinker after the rest.

    Move the steak to a cutting board and rest 5 to 10 minutes.

    Slice thinly across the grain.

    Squeeze a little fresh lime over the slices and serve hot.
