Ingredients for Calzone
  • 4 oz pepperoni
  • 2 cups mozzarella
  • 2 tbs olive oil
  • 1/4 cup all-purpose flour, for the board
  • 1 1/2 lb pizza dough
  • 1 cup marinara sauce
  • 1/4 tsp ground black pepper
  • 1/2 tsp kosher salt

What the best recipes taught us

  • Leave a clean border around the filling. A clean rim is what pinches the calzone shut.
  • Cut a couple of vents in the top. The vents let steam out so the crust stays crisp.

Method

    Heat the oven to 450°F. Divide the dough into 4 pieces. On a floured board, roll each piece into an oval.

    Dough ovals topped with marinara, mozzarella, and pepperoni
    1cmarinara sauce
    2cmozzarella
    4ozpepperoni
    2tbsolive oil
    1/2tspkosher salt
    1/4tspground black pepper

    On one half of each oval, spread a little marinara.

    Add mozzarella and pepperoni on that half. Leave a border.

    Season the filling with salt and pepper.

    Fold the dough over. Pinch the seam tight. Cut two slits in the top.

    Brush the tops with olive oil.

    Baked calzones on a bare sheet

    Set the calzones on a baking sheet. Bake until deep gold, 18 to 22 minutes.

    Rest 5 minutes. Serve with the remaining marinara.
