  • 1 1/2 lb squid, cleaned and cut into rings
  • 2 garlic cloves, minced
  • 2 cups neutral oil, for frying
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 2 lemons, cut in wedges
  • 1/2 tsp ground black pepper
  • 1 1/2 tsp kosher salt

What the best recipes taught us

  • Fry the rings in hot oil, and keep the cook short. A short fry in hot oil keeps the coating crisp.
  • Salt the calamari as soon as it comes out. The hot rings are what take the salt.

Method

    Squid rings soaking in milk

    1cwhole milk
    1call-purpose flour
    2garlic cloves
    11/2tspkosher salt
    1/2tspground black pepper

    Pat the squid dry. In a bowl, soak the rings in the milk 15 minutes. Drain, then pat dry again.

    In a second bowl, mix the flour, minced garlic, salt, and pepper. Toss the squid in the flour. Shake off the extra.

    Oil heating in a heavy pot
    2cneutral oil, for frying

    Pour oil into a heavy pot to a depth of about 2 inches. Heat it to 375°F.

    Fry the squid in small batches until pale gold, 1 to 2 minutes. Lift out onto a rack. Salt while hot.

    Serve with lemon wedges.
