  • 1 1/2 lb ground beef, 80/20
  • 4 hamburger buns
  • 4 cheddar slices
  • 1 yellow onion, sliced
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt

What the best recipes taught us

  • Handle the beef as little as you can. A loose mix of meat is what stays tender.
  • Pull the burgers at 160°F. That temperature is when ground beef is cooked through.

Method

    Four raw burger patties

    Divide the beef into 4 balls. Press them into 4 patties a little wider than the buns. Salt and pepper both sides.

    Heat a skillet or griddle over medium-high heat. Cook the patties until a thermometer in the center reads 160°F, about 3 to 4 minutes per side.

    Lay a slice of cheese on each patty in the last minute so it melts.

    Lift the patties onto a plate. Toast the buns in the same skillet.
