  • 2 large eggs
  • 1/2 cup unsalted butter
  • 3/4 cup all-purpose flour
  • 4 oz unsweetened chocolate
  • 1 1/4 cups granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt

What the best recipes taught us

  • Pull them when a few crumbs still cling to a toothpick. A few crumbs on the toothpick is when they stay moist.
  • Cool them in the pan before you cut. Cooling is what lets them set so you can cut squares.

Method

    Greased 8-inch square pan beside a bowl of melted chocolate with two egg yolks
    1/2cunsalted butter
    4ozunsweetened chocolate
    11/4cgranulated sugar
    2 largeeggs
    1tspvanilla extract

    Heat the oven to 350°F. Grease an 8-inch square pan.

    Melt the butter and chocolate together in a saucepan over low heat. Pour into a bowl. Whisk in the sugar until smooth.

    Whisk in the eggs and vanilla.

    Stir the flour and salt into the bowl just until the flour disappears.

    Spread in the pan. Bake until a toothpick comes out with a few moist crumbs, 25 to 30 minutes.

    Cool in the pan before you cut squares.
