Ingredients for Borscht
  • 1 1/2 lb beef chuck, cut in chunks
  • 2 Yukon Gold potatoes, diced
  • 1 yellow onion, chopped
  • 2 carrots, shredded
  • 3 garlic cloves
  • 1/2 cup sour cream
  • 1/4 cup fresh dill
  • 2 bay leaves
  • 4 beets, peeled and shredded
  • 2 cups green cabbage, shredded
  • 2 tbs tomato paste
  • 2 tbs apple cider vinegar
  • 1/2 tsp ground black pepper
  • 1 1/2 tsp kosher salt

What the best recipes taught us

  • Simmer the beets until the broth turns red. If you rush that, the soup will not turn red and it will taste bland.
  • Stir in the vinegar at the end. If you skip the sour, it tastes like sweet vegetable soup.

Method

    In a heavy pot, cover the beef with water. Add the bay leaves to the pot. Simmer until the meat is tender, about 1 hour. Lift the beef out. Shred it. Keep the liquid in the pot.

    Add the onion, carrot, beets, and garlic to the pot. Simmer 15 minutes.

    Add the cabbage and potatoes to the pot. Simmer until the vegetables are tender, 20 to 25 minutes.

    Stir in the tomato paste and vinegar.

    Return the shredded beef to the pot. Add the salt and the pepper to the pot.

    Remove the bay leaves.

    Serve with dill and sour cream.
