  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 2 cups all-purpose flour
  • 1 tbs baking powder
  • 1 tbs sugar
  • 1/2 tsp baking soda
  • 1 tsp kosher salt

What the best recipes taught us

  • Keep the butter cold. If it melts in the bowl, the biscuits will not rise as tall.
  • Stop mixing when the dough looks shaggy. If you keep working it, the biscuits will come out dense.

Method

    3/4ccold buttermilk

    Heat the oven to 450°F.

    Whisk the flour, baking powder, baking soda, sugar, and salt in a bowl.

    Cut the cold butter into the flour until the pieces are pea-size.

    Pour in the cold buttermilk. Stir just until a shaggy dough forms.

    Turn the dough onto a lightly floured counter. Pat to 3/4 inch. Fold in half once. Pat again.

    Cut 8 biscuits. Set them close together on a baking sheet.
