Ingredients

Ingredients for Biryani
  • 2 lb bone-in chicken pieces
  • 4 garlic cloves, minced
  • 2 yellow onions, sliced
  • 3 tbs ghee
  • 1/4 cup warm milk
  • 2 cups basmati rice
  • 1 tbs fresh ginger, minced
  • 1/4 cup fresh mint
  • 1 cup plain yogurt
  • 1/2 tsp saffron threads
  • 1 tsp red chili powder
  • 1/4 cup fresh cilantro
  • 2 tsp kosher salt

What the best recipes taught us

  • Fry the onions until they are brown. If you stop before they brown, the pot will taste bland.
  • Boil the rice only until the center is still firm. If you cook it all the way now, it will be mushy after the steam.

    Rinse the basmati in a bowl until the water runs almost clear. Cover with water and soak 20 minutes.

    Meanwhile, melt the ghee in a heavy pot over medium heat. Fry the onions until brown. Lift half of them out onto a plate.

    Stir the minced garlic and ginger into the pot. Add the chicken to the pot and brown it.

    Stir in yogurt and chili powder. Stir the salt into the pot. Simmer until the chicken is almost tender, 15 minutes.

    Drain the soaked rice. Boil a pot of water. Add the drained rice to the boiling water.

    Meanwhile, steep the saffron in the warm milk.

    Cook the rice until the grain is still firm in the center, 5 to 7 minutes. Drain.

    Layer the drained rice over the chicken in the pot. Sprinkle the reserved onions, mint, and cilantro over the rice. Spoon the saffron milk over the top.

    Cover the pot tightly. Cook on the lowest heat 20 minutes. Rest 10 minutes. Fluff from the sides.
