Ingredients for Beef Stew
  • 2 lb beef chuck, cut in chunks
  • 1 1/2 lb Yukon Gold potatoes, cut in chunks
  • 2 yellow onions, chopped
  • 4 carrots, cut in chunks
  • 4 garlic cloves, minced
  • 2 celery stalks, sliced
  • 3 cups beef broth
  • 2 tbs olive oil
  • 1 cup dry red wine
  • 1/4 cup all-purpose flour
  • 2 tbs tomato paste
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 2 tbs fresh parsley
  • 1 tsp ground black pepper
  • 1 1/2 tsp kosher salt

What the best recipes taught us

  • Brown the beef in batches. If you crowd the pot, the meat steams and does not brown.
  • Add the potatoes later. If they go in at the start, they will fall apart.

Method

    Beef browning in a Dutch oven
    2lbsbeef chuck, cut in chunks
    11/2tspkosher salt
    1tspground black pepper
    1/4call-purpose flour
    2tbsolive oil

    Heat the oven to 325°F.

    Pat the beef dry. Salt and pepper it. Toss with the flour.

    Heat the oil in a Dutch oven over medium-high heat. Brown the beef in batches. Lift out.

    2celery stalks, sliced
    4garlic cloves, minced

    Lower the heat to medium. Add the onion, carrot, and celery. Cook until the onion is soft, 6 to 8 minutes.

    Stir in the garlic 30 seconds.

    Stir in the tomato paste 1 minute.

    Wine and broth in the Dutch oven

    3cbeef broth
    4 sprigsfresh thyme
    2bay leaves

    Pour in the wine. Scrape the browned bits. Simmer 2 minutes.

    Return the beef. Add the broth, thyme, and bay leaves. The liquid should almost cover the meat.

    Bring to a simmer. Cover and move to the oven for 1 hour.

    Potatoes added to the stew

    Stir in the potatoes. Cover and cook until the beef and potatoes are tender, 45 to 60 minutes more.

    Remove the bay leaves.

    Salt and pepper to taste.

    Sprinkle with chopped parsley.
