Ingredients for Beef Rendang
  • 2 lb beef chuck, cut in chunks
  • 4 garlic cloves
  • 4 shallots
  • 2 cups coconut milk
  • 2 tbs coconut oil
  • 2 lemongrass stalks
  • 2 tbs fresh ginger
  • 1 tbs palm sugar or brown sugar
  • 1 cinnamon stick
  • 1 tbs tamarind paste
  • 1 tsp ground turmeric
  • 6 dried red chiles
  • 1 tsp kosher salt

What the best recipes taught us

  • Fry the paste until the oil separates. If you rush this step, the sauce will taste raw.
  • Cook until the liquid is almost gone and the beef is coated in a dark paste. If you stop while it is still soupy, it is a wet curry, not rendang.

    Spice paste and raw beef chunks

    Cut the beef into 1 1/2 inch chunks. Pat dry.

    Blend or pound the shallots, garlic, chiles, ginger, and turmeric to a paste.

    Paste frying until oil separates

    Heat the coconut oil in a heavy pot over medium heat.

    Fry the paste until the oil separates, 8 to 10 minutes.

    Add the beef and turn to coat.

    Pour in the coconut milk. Add the lemongrass, cinnamon, tamarind, and sugar.

    Bring to a simmer. Cook uncovered, stirring often as it thickens, until the liquid is almost gone and the beef is tender and coated in a dark paste, 2 1/2 to 3 hours. Lower the heat whenever it threatens to scorch.

    Salt to taste.
