  • 1 lb spaghetti
  • 1/2 cup grated parmesan or pecorino
  • 6 garlic cloves, thinly sliced
  • 1/3 cup olive oil
  • 1 teaspoon red pepper flakes
  • 1/4 cup chopped fresh parsley
  • 1 1/2 tablespoons kosher salt

What the best recipes taught us

  • Cook the sliced garlic in the oil until it turns gold. If the garlic is underdone, it will taste raw. If it browns, it will taste bitter.
  • Toss the spaghetti with a splash of the pasta water until the oil coats the noodles. If you skip the pasta water, the oil will sit on the noodles instead of coating them.

    Bring a large pot of water to a boil. Add the salt to the water.

    Add the spaghetti to the boiling water. Cook until it is just shy of done. Scoop out 1 cup of the pasta water. Drain.

    Warm the olive oil in a wide skillet over medium-low heat.

    Add the sliced garlic. Cook, stirring, until it turns gold, 2 to 4 minutes. Do not let it brown.

    Stir in the red pepper flakes. Let them sizzle 20 to 30 seconds.

    Add the spaghetti to the skillet with a splash of the pasta water.

    Toss over medium heat, adding more pasta water if needed, until the oil coats the noodles, 1 to 2 minutes.

    Take the pan off the heat. Add the parsley, then the cheese. Salt to taste. Serve.
